Alphabet Soup





Old fashioned alphabet soup from scratch!
   
     I saw a bag of alphabet pasta at the store and I could not resist!  This alphabet soup is almost like the canned version, but I used all fresh ingredients.
     There are no special cooking techniques involved in making a soup like this.  The oldest soup recipes in the world only required boiling or simmering ingredients in water.  Many traditional soups in the modern age are still made this way.
  
     Alphabet Soup Recipe:
     This recipe makes 2 medium size servings of soup!
     Heat a sauce pot over medium high heat.
     Add 4 1/2 cups of rich vegetable stock.
     Bring the liquid to a boil.
     Add 1 tablespoon of chopped onion.
     Add 1/4 cup of sliced celery.
     Add 1/4 cup of diced carrot.
     Add 1/2 of a sliced green onion.
     Add 1/4 cup of diced rutabaga or turnip.
     Add 2 tablespoons of corn kernels.
     Add 1/4 cup of diced potato.
     Add 1/4 cup of lima beans.
     Add 1 peeled and seeded diced fresh plum tomato.
     Add sea salt and black pepper.
     Add 1 pinch of Herbes du Provence.
     After the soup comes back to a boil, reduce the temperature to medium/medium low heat.
     Simmer the soup, till the hard root vegetables start to become tender.
     Add 1/3 cup of alphabet shaped pasta.
     Add 2 tablespoons of peas.
     Add 1/4 cup of small green been pieces.
     Simmer and occasionally stir the soup, till the pasta and vegetables become tender.
     Ladle the soup into a soup bowl. 
     No garnish is necessary!
  
     Alphabet soup is fun healthy vegan food.  The flavor is rich with vegetables.  A mild French herb flavor comes from the herbs du provence.
