Chipotle Puerco Tacos con Guacamole








Such a yummy taco! 
   
     Chipotle peppers have a deep smoky flavor that goes well with shredded pork.  This taco style is like the tacos that are served in Las Vegas and the southwestern "fifty cent taco stands."  Fifty cent taco stands only put the meat on the tortillas with no garnish or anything extra.  Taco stands do have a self serve condiment table with sauces, escabeche and toppings.  Guacamole and cheese both cost extra.  The prices are very cheap and the quality of the authentic Mexican food is great!
   
     Guacamole Recipe:  
     Place the pulp of one ripe avocado into a mixing bowl.
     Add 1 tablespoon each of these small chopped vegetables:
     - jalapeno pepper
     - onion
     - green onion
     - tomato.
     Add 10 leaves of chopped fresh cilantro.
     Add sea salt and black pepper.
     Add 2 teaspoons of fresh lime juice.
     Mix and mash the ingredients together.
     Chill the guacamole in a refrigerator.
          
     Chipotle Puerco Recipe:
     Cut about 6 to 8 ounces of pork blade steak meat or pork shoulder chuck roast meat into thick strips.
     Heat a large sauce pot over medium heat. 
     Add 1 splash of olive oil or 1 ounce of home made lard.  (Lard is more authentic.)
     Saute the pork strips, till they becomes lightly browned.
     Add 1 chopped garlic clove.
     Add 2 tablespoons of chopped green bell pepper.
     Add 2 tablespoons of chopped onion.
     Add sea salt and black pepper.
     Add 4 pinches of ground anatto powder.
     Add 3 pinches of cumin.
     Add 2 ounces of chopped chipotle pepper en adobo.  (Canned chipotle en adobo is fine for this recipe.) 
     Saute the ingredients for 1 minute.
     Add 10 to 12 cilantro leaves.
     Add enough water to cover the pork.
     Bring broth to a boil over high heat. 
     Reduce the temperature to low heat.
     Simmer for 1 hour, till the meat becomes very tender and it can be easily shredded.  Add water as necessary.
     After the pork becomes tender, allow the liquid to completely reduce, till it is nearly evaporated.
     Remove the pot from the heat.
     Use 2 forks to coarsely shred the pork strips.
     Keep the shredded chipotle puerco taco meat warm on a stove top.
   
     Chipotle Puerco Tacos con Guacamole:
     Warm 2 small flour tortillas or 2 small corn tortillas in a dry pan over medium/medium low heat.
     Place a portion of the chipotle pork on each warm tortilla.
     Garnish with cilantro sprigs.
     Serve with shredded lettuce and chopped tomato.
     Place a scoop of the guacamole on a lettuce leaf bed on the plate.
     Garnish the guacamole with lime slices.
   
     The tender chipotle flavored shredded pork flavor is mildly spicy.  The guacamole is very light and refreshing.  I prefer to to never add sour cream to guacamole.  It is like diluting the avocado flavor.  The lime adds a cooling effect.  Placing the lettuce tomato and guacamole on the shredded pork tacos is a traditional way to eat tacos.  Tacos are fun finger food!  Delicious too!  ...  Shawna
