Cilantro Lime Mahi Mahi with Papaya Salsa









This tropical caribbean recipe is healthy and delicious!
   
     This recipe is Florida caribbean style cooking.  This cuisine is known as Floribbean.  Fruit salsa is so nice on fresh tropical fish!
   
     Papaya Salsa:
     Place 2 tablespoons each of these finely diced vegetables into a mixing bowl:
     - Green bell pepper
     - Red bell pepper
     - Onion
     Add 1 chopped green onion.
     Add 1/2 of a finely chopped seeded serrano pepper.
     Add 1 cup of chopped papaya.
     Add 1/2 tablespoon of chopped fresh cilantro.
     Add sea salt and white pepper.
     Add 1 tablespoon of rice vinegar.
     Add 1/2 tablespoon of fresh lime juice.
     Toss the ingredients together.
     Let the salsa stand for 20 minutes, so the flavors meld.
   
     Cilantro Lime Mahi Mahi: 
     Butterfly cut a thick 6 to 8 ounce filet of mahi mahi, so it becomes an even thickness.
     Season the fish with sea salt and coarsely ground black pepper.
     Heat a saute pan over medium heat.
     Add 1/2 tablespoon of blended olive oil.
     Add 1 pat of unsalted butter.
     Add the seasoned mahi mahi filet.
     Pan sear the fish on both sides, till it becomes almost fully cooked.
     Drain off the excess grease from the pan.
     Reduce the temperature to medium low heat.
     Add 1/2 tablespoon of fresh lime juice.
     Add 1/3 cup of dry white wine.
     Add 1 tablespoon of  coarsely chopped cilantro leaves.
     Simmer and reduce the sauce, till the cilantro leaves and tiny amount of sauce can cling to the mahi mahi filet.  Only about 1 or 2 tablespoons of thin glace sauce should remain in the pan.
   
     Cilantro Lime Mahi Mahi with Papaya Salsa:
     Place the cilantro lime mahi mahi filet on a plate.
     Spoon any reduced cilantro lime and white wine reduction over the fish.
     Mound a generous portion of the papaya salsa on top of the fish.
     Serve with a vegetable of your choice.
     Garnish the plate with a cilantro sprig and a lime slice.
     I served the entree in the pictures with blanched julienne carrots and green beans that were sauteed in butter with toasted pepitas.  (Pepitas are toasted calabaza seeds.)
   
     Papaya salsa has such a soothing tropical flavor.  The combination of the cilantro lime mahi mahi and the papaya salsa is pure tropical paradise!  The vegetables with pepitas add a nice touch to the plate.  Yum!  ...  Shawna
