Sometimes a craving is satisfied with a nice plate of tasty Chinese American style food!
Its been a while since I posted a recipe with a fermented black bean sauce. The flavor of fermented black bean is very savory. Pork is very nice with fermented black beans.
For this Chinese American to-go restaurant style entree, the pork is coated with batter and fried till crisp.
Pork Preparation:
Trim the fat off of 6 ounces of pork shoulder meat or loin ends.
Slice the pork into thin bite size pieces.
Batter:
Place 2 tablespoons of flour into a mixing bowl.
Add 2 tablespoons of cornstarch.
Add 1 egg.
Add enough water, while stirring, to create a medium thin batter.
Add sea salt and white pepper.
Add 1 pinch of five spice powder.
Add 1 pinch of garlic powder.
Add 1/2 teaspoon of ginger paste.
Add 1 pinch of turmeric.
Mix the ingredients together.
Crispy Pork:
Dredge the pork meat pieces in flour.
Dip the floured pieces of pork in the batter.
Heat 4" to 5" of vegetable frying oil in a high sided pot to 360 degrees.
Place a few of the battered pork pieces in the hot oil at a time, so they do not stick together.
Fry the battered pork pieces, till they are cooked crisp and golden brown.
Set the crispy fried pork on a dry towel to drain off any excess oil.
Stir Fry Crispy Pork and Vegetables with Fermented Black Bean Sauce:
Before to have all the ingredients ready, before starting any stir fry recipe!
Heat a wok or saute pan over medium/medium high heat.
Add 2 tablespoons of vegetable oil.
Add 1 minced clove of garlic.
Add 1/2 teaspoon of minced ginger.
Fry for a few seconds, till the garlic and ginger become aromatic.
Add 1/4 cup to 1/2 cup of each of these vegetables:
- thin carrot slices
- bias sliced celery
- thin onion strips
- bite size pieces of green bell pepper and red bell pepper
- sliced zucchini
Add 1 green onion that is cut into bite size pieces
Add 2 button cave mushrooms that are cut into quarter wedges.
Stir fry the vegetables, till they become half way cooked.
Add 1 1/3 cups of pork broth.
Add 1 tablespoon of fermented black bean paste. (Fermented black bean paste can be very salty, so only use a little bit.)
Mix a little bit of corn starch and cold water together to form a slurry.
Add just enough of the corn starch and water slurry, while stirring, to thicken the sauce to a thin sauce consistency.
Add 6 to 8 trimmed snow peas.
Add the reserved crispy fried pork pieces.
Toss and stir the pork and vegetables together, till the pork reheats and till the ingredients become coated with the sauce.
Place the Stir Fry Crispy Pork and Vegetables with Fermented Black Bean Sauce on a plate.
Sprinkle thin sliced green onion over the crispy pork and vegetables.
Serve with steamed jasmine rice on the side.
The vegetables should be cooked so they still have a crispy bite to them. This is a quick, flavorful recipe. Chinese American to-go food! Yum! ... Shawna
