Caribbean fusion soup!
Ginger kale soup is a traditional caribbean soup. Ginger kale soup is delicious on its own. I felt like adding a little something extra to a ginger kale soup that would compliment the flavors. Mushroom ham wontons added an interesting flavor and texture to this soup!
Ginger Kale Soup Recipe:
This recipe makes 1 serving of soup!
Place 2 1/2 cups of light chicken broth into a sauce pot.
Bring the broth to a boil over medium high heat.
Add 1 1/2 tablespoons of minced ginger.
Add 1 clove of minced garlic.
Add sea salt and black pepper.
Add 1 chopped scallion.
Add 2 tablespoons of chopped onion.
Add 1 pinch of allspice.
Add 2 handfuls of chopped green kale leaf.
Return the broth to a boil.
Reduce the temperature to low heat.
Simmer the soup, till the kale becomes tender.
Mushroom and Ham Wontons Recipe:
Place 2 tablespoons of finely chopped mushrooms into a small bowl.
Add 2 tablespoons of finely minced ham.
Add sea salt and black pepper.
Add 1/2 tablespoon of whisked egg.
Stir the ingredients together.
Place three 4" x 4" wonton wrappers on a cutting board.
Place a spoonful of the mushroom ham stuffing mixture on the middle of each wonton wrapper.
Brush the edges of the wonton wrappers with egg wash.
Fold each wonton wrapper in half, so they form triangle shapes.
Press the edges together.
Allow the wontons to air dry for ten minutes in a refrigerator.
Finishing the Soup:
Raise the temperature of the soup pot to medium/medium high heat.
Bring the soup back up to a gentle boil.
Place the wontons in the in the simmering soup.
Simmer the wontons for 3 minutes.
Ladle the soup into a bowl.
Try to expose the wontons on the surface of the soup.
Ginger kale soup is soothing and delicious on its own. The basic simple flavor of the mushroom ham wontons adds a new twist to this traditional caribbean soup. Yum! ... Shawna
