Grilled Denver Egg Sandwich with Purple Potato Home Fries






     A Denver omelette and a western omelette are almost the same thing.  A Denver omelette has cheese and a western omelette does not.  The ingredients of a Denver omelette are perfect for making a tasty breakfast egg sandwich.
     Purple potatoes taste great, but they do not always photograph well, especially when they have been grilled or sauteed.  Purple potatoes are an ancient Peruvian hybrid.  The Incan and many older south American civilizations had extensive plant hybridization programs.  
   
     Purple Potato Home Fry Recipe:
     Boil about 5 to 6 ounces of whole purple potatoes, till they become 3/4's fully cooked.  (Leave the skin on the potatoes.)
     Drain off the hot water.
     Cool the potatoes under cold running water.
     Slice the potatoes.
     Heat a saute pan over medium/medium low heat.
     Add 4 pats of unsalted butter.
     Add a little bit of sliced onion.
     Add a little bit of chopped red bell pepper.
     Add the sliced purple potatoes.
     Add sea salt and black pepper.
     Add 1 pinch of cayenne pepper.
     Saute the potatoes and vegetables, till they become lightly caramelized.
     Keep the purple potato home fries warm on a stove top.
  
     Denver Egg Sandwich Recipe:
     Brush one side of two slices of bread with melted unsalted butter.  (I chose rye bread.)
     Place a few thin slices of swiss cheese or cheddar cheese on the bread slices.
     Set prepared bread slices aside.
     Preheat a griddle or wide saute pan over medium/medium low heat for later in the recipe.
     Heat a non-stick saute pan over medium/medium low heat.
     Add 2 to 3 pats of unsalted butter.
     Add 2 tablespoons of chopped ham.
     Add 2 tablespoons of chopped green bell pepper.
     Add 2 tablespoons of chopped red bell pepper.
     Add 2 tablespoons of chopped onion.
     Saute till the vegetables become tender.
     Add 1 whisked egg.
     Saute and scramble, till the egg mixture becomes fully cooked.
     Place the Denver egg mixture on the cheese on one of the slices of bread.
     Place the 2 buttered sandwich halves side by side on the preheated griddle or wide saute pan.
     Grill the 2 sandwich halves till they become toasted golden brown.
     Use a spatula to place the two grilled sandwich halves together and then place the sandwich on a cutting board.
     Cut the Denver egg sandwich in half and set it on a plate.
     Place the purple potato home fries on the plate.
     Garnish with an Italian parsley sprig.

     The flavor of this Denver egg sandwich is a good example of classic American diner breakfast cooking.  This is a very nice tasting breakfast sandwich!  Yum!  ...  Shawna
