Memphis Dry Rub Barbecue Spare Ribs with Green Potato Salad and Buttermilk Cole Slaw









One of the classic styles of American BBQ!  Memphis Dry Rub!
  
     Memphis Dry Rub Seasoning Recipe:
     This recipe makes enough for a 3 to 6 rib spare rib rack section.  This recipe is easy to multiply.
     Place 2 tablespoons of sugar into a bowl.
     Add 2 tablespoons of paprika.
     Add 1 tablespoon of guajillo chile powder.
     Add 1 tablespoon of ancho chile powder.
     Add 1/2 tablespoon of garlic powder.
     Add 2 teaspoons of onion powder.
     Add 2 teaspoons of cayenne pepper.
     Add 1 teaspoon of black pepper.
     Add 1 teaspoon of sea salt.
     Add 1 teaspoon of cumin.
     Mix the spices together. 
  
     Memphis Dry Rub Barbecue Spare Ribs:
     Generously rub the spice mixture on a small 3 to 6 rib rack section of pork spare ribs.
     Either slow smoke the rack of ribs at 225º in a smoker or bake the ribs in a 250º oven.
     Cook the ribs, till the meat becomes tender and juicy, but not so the meat is not quite falling off of the bones.  The ribs will take more than an hour of slow cooking time.
  
     Memphis BBQ Sauce Recipe:
     This recipe makes about 1 1/3 cups of sauce!
     Place 1/2 cup of brown sugar into a sauce pot.
     Add 2 cups of  water.
     Place the sauce pot over low heat. 
     Add sea salt and black pepper. 
     Add 4 pinches of cayenne pepper.
     Add 1 tablespoon of paprika.
     Add 1 tablespoon of ancho chile powder.
     Add 1/2 tablespoon of guajillo chile powder. 
     Add 1/2 cup of tomato puree.
     Add 1 teaspoon of garlic powder.
     Add 1/2 tablespoon of onion powder.
     Add 1 teaspoon of cumin.
     Add 1 tablespoon of dijon mustard.
     Add 2 teaspoons of minced ginger.
     Add 2 tablespoons of rice vinegar.
     Add 2 tablespoons of apple cider vinegar.
     Slowly simmer the sauce, till it becomes reduced to a medium thin BBQ sauce consistency.
     Taste the sauce.  It should be mildly spicy with a rich sweet and tangy BBQ sauce flavor.  The sauce should be slightly on the sweet side of the sweet and sour flavor balance.
     Strain the sauce through a fine mesh strainer into a large ramekin.
  
     Green Potato Salad:
     Boil 1 peeled russet potato with water over high heat in a sauce pot.
     Cook the potato till it becomes tender, but not mushy.
     Cool the potato under cold running water.
     Dice the potato into small cube shaped pieces.
     Place the diced potato into a mixing bowl.
     Add 1 tablespoon of minced green bell pepper.
     Add 1/2 tablespoon of minced onion.
     Add 2 finely minced green onion tops.
     Add 1 tablespoon of finely minced parsley.
     Add sea salt and black pepper.
     Add 1 tablespoon of sour cream.
     Add 1 teaspoon of dijon mustard.
     Add just enough mayonnaise to bind the ingredients together.
     Mix the potato salad gently.
     Chill the potato salad in a refrigerator.
  
     Buttermilk Cole Slaw Recipe:
     Place 2 cups of thin shaved cabbage into a mixing bowl. 
     Add 1/3 cup of thin small strips of mixed green bell pepper and red bell pepper.
     Add 1 tablespoon of minced onion.
     Add 1/2 cup of buttermilk.
     Add sea salt and coarse ground black pepper.
     Add 1 tablespoon of sugar.
     Mix the ingredients together.
     Chill the cole slaw in a refrigerator.
  
     Memphis Dry Rub Barbecue Spare Ribs with Green Potato Salad and Buttermilk Cole Slaw:
     Place the buttermilk coleslaw on some lettuce leaves on a plate.
     Place the green potato salad on lettuce leaves on a plate.
     Place the Memphis BBQ in a large shallow ramekin and place it on the plate.  
     Slice the ribs 3/4 through, between the bones, so the ribs are attached to each other on one end.
     Set the ribs on the plate.
     You can lightly sauce the ribs before serving or serve the sauce on the side.  Most people like the sauce on the side when eating Memphis BBQ ribs.
  
     This is Memphis BBQ Spare Ribs!  These are the famous traditional Memphis Tennessee dry rub BBQ style ribs that have become very popular in recent years.  The side of sauce is tangy and full of flavor!  The buttermilk cole slaw and the Louisiana green potato salad are traditional recipes too.
     This BBQ is a very special summer holiday entree!  Memphis BBQ Ribs are popular on Kentucky Derby Day too.
     By the way, I smoked ribs and cooked in the busiest BBQ restaurant in the world a few years ago.  The restaurant won the World Championship Of BBQ.  I definitely know how to cook great BBQ!  ...  Shawna
