Bubble and Squeak





     Bubble and squeak is an English recipe that is made with leftover vegetables and potatoes.  Most often, the leftovers come from a Sunday roast dinner.
     There is no single recipe for bubble and squeak.  The recipe can vary from household to household.  Leftover cabbage is the most popular vegetable to make bubble and squeak with.  Boiled potatoes, roasted potatoes or mashed potatoes all can be used.  If it can be chopped or mashed, then it can be turned into bubble and squeak!
     Bubble and squeak is usually served as breakfast.  The mashed vegetables and potato is formed into a patty shape and then grilled.  Leftover meat from a Sunday roast can be sliced and served with the bubble and squeak.  Sometimes chopped small bits of leftover meat, salt pork or bacon are added to the bubble and recipe.
     Bubble and squeak gets its name from the loud bubbling, popping and squeaking noise that is makes when it is grilled with butter!  Be careful, because pieces of bubble and squeak can pop and fly through the air.
   
     Bubble and Squeak:
     Place 1 cup of a leftover cooked russet potato in a mixing bowl.
     Note:  The russet potato can be leftover roasted, mashed or boiled potato.  Fried potato (English chips) is not a good choice for making bubble and squeak.
     Add 3/4 cup of chopped leftover boiled or braised cabbage.  (Any chopped leftover vegetables can be used.)
     Add 2 tablespoons of minced onion.
     Add 1 chopped green top of green onion.
     Add 3 pinches of coarsely chopped Italian parsley.
     Add sea salt and black pepper.
     Mash the ingredients, till the ingredients can stick together like a coarse vegetable potato pancake.
     Shape the bubble and squeak mixture into 2 patty shapes.
     Heat a non-stick griddle or a seasoned cast iron skillet over medium/medium low heat.
     Place 2 pats of  unsalted butter on the griddle.
     Place the bubble and squeak patties on the griddle.
     Grill the bubble and squeak patties on both sides, till they become a golden brown color.
     Serve the bubble and squeak for breakfast with a variety of items like these:
     - sunny side up fried egg
     - grilled tomato slices
     - caramelized grilled onion slices
     - sliced leftover roasted beef, pork or sausage
     Garnish the plate with parsley sprigs.
  
     This is simple English comfort cooking!  The leftover cabbage and potatoes are used to create something new, instead of being reheated and served as is.  If there is no leftover roasted meat, then just cook a small piece of meat for this recipe.  If you really have a craving for bubble and squeak, then by all means cook some potatoes and cabbage fresh!  Yum!  ...  Shawna
