Black Bean Garlic Sauce Chicken, Snow Peas and Enoki with Ginger Chile Bok Choy



A nice light meal with a great flavor!
   
     Fermented bean paste is made with fermented soy beans.  The fermentation process involves salt, like for making sauerkraut or kimchi.  Always taste the black bean paste before cooking with it.  The salt content varies and some black bean pastes are very salty.

     Brown Rice:
     Cook 1/2 cup of plain brown rice ahead of time.  Brown rice requires a little more water than long grain rice.  A proportion of 1/2 cup of brown rice to 1 1/4 cups of water is good.
   
     Black Bean Garlic Sauce Chicken, Snow Peas and Enoki:
     Heat a saute pan over medium heat.
     Add 1 splash of vegetable oil.
     Add 3 cloves of minced garlic.
     Saute till the garlic turns a golden color.
     Add 5 to 6 ounces of thin sliced chicken breast filet.
     Saute till the chicken is fully cooked.
     Add 1 cup of chicken broth.
     Add 1/2 tablespoon or 2 teaspoons of fermented black bean paste.  (Fermented black bean paste can be very salty, so only a couple teaspoons is more than enough.)
     Simmer and reduce the liquid, till it becomes a thin sauce consistency.
     Add 10 snow peas.
     Add 1 tiny bunch of trimmed enoki mushrooms.
     Toss the ingredients together.
     Keep the Black Bean Garlic Sauce Chicken, Snow Peas and Enoki warm on a stove top.

     Ginger Chili Bok Choy Recipe: 
     Blanch 2 to 3 small bok choy that are cut into quarters, till they are cooked al dente.
     Remove the bok choy from the boiling water and set them aside.
     Heat a saute pan over medium heat.
     Add 1 tablespoon of vegetable oil.
     Add 1 teaspoon of sesame oil.
     Add 1 1/2 teaspoons of minced ginger.
     Saute till the ginger becomes aromatic, but do not let the ginger brown.
     Add 1/2 tablespoon of Korean Coarse Red Serrano Chili paste.  (Sambal)
     Add 1 pinch of five spice powder.
     Add 1/2 cup of chicken broth.
     Add the blanched bok choy.
     Toss the ingredients together.
     Keep the ginger chile bok choy warm on a stove top.


     Black Bean Garlic Sauce Chicken, Snow Peas and Enoki with Ginger Chile Bok Choy:
     Use a mold to place some of the plain brown rice on a plate.
     Place the chicken, enoki and snow peas on the plate.
     Spoon the sauce over the the chicken.
 
     This plate of food is big on flavor.  This is a very healthy entree too.  Yum!  ...  Shawna
